Our rums are exclusively made alongside growers and distillers in Guatemala and the Dominican Republic, representing the very best of Latin American terroir and rum making techniques. Nestled among vast fields of sugarcane crop, our distilleries harvest estate grown sugarcane and press onsite to guarantee the highest quality of raw materials, and that we’re mitigating unnecessary carbon emissions.
Our Añejo blend comes from our founder’s home country of Guatemala, a land known for its world renowned aged rums. Rooted in traditional "spanish style" rum making, this rum is distilled in Stainless Steel Column stills and barrel aged for up to 12 years in new, charred American White Oak casks.
Our Blanco is made from fresh pressed sugarcane juice grown on the island of Hispaniola, aka the Dominican Republic. After a slow fermentation process, we distill in both copper pot stills and column stills. Our pot still remains unaged, while we settle our column still rum in ex-bourbon barrels for at least one year before blending together.
Sitting at over proof, our rum blends are ready for the last stage of our rum making process. Freshly harvested coconut water is transferred by cold chain and gently infused into our tanks, diluting the blends down to the desired bottle proof. The blends rest from 24 hours to 5 days, and are lightly filtered to remove any coconut sediment.
Coconut water is packed with natural minerals, salts, sugar (just a little) and fats. By using it as an agent to dilute spirits, a chemical reaction takes place akin to the way salt affects food when we’re cooking. The coconut water doesn’t add a “coconut taste”, far from a flavored coconut rum, in fact, it works to enhance our beautiful rums’ own natural flavors by brightening their fruity and floral notes, while dampening any harsh bitter notes.
Our coconut water is locally sourced from independent farmers, it’s never frozen or pasteurized, guaranteeing our star ingredient’s special nutritional properties remain intact.
